When to cut phalaenopsis spikes

I am growing beautiful orchids in my classroom western facing-a-wall-anyhow-windowsill with flourescent lights. I have a two year old hybrid I bought that was in full bloom and bloomed most of last year and the year before. Now we're going into March and no new spike has emerged. There is some indication of growth on the newest spike (there are two), but the original spike that came with it has not produced and I am wondering when the best time to snip it would be. Do I cut or leave it alone? Thanks for any suggestions.
